味增烤魚 Fish Misoyaki
(Grilled Miso Marinated Fish)


材料 Ingredients
大菱鲆魚排(2.5cm厚) Turbot filet (1" thick)2 片 filet
味增醃料 Miso Marinade1 份 portion

註:此菜宜用高油脂的魚。

做法
1.準備味增醃料
2.保鮮盒底部墊上一張紙巾。魚片沖洗乾淨後用紙巾擦乾。將味增醃料刷在魚片上,然後放進保鮮盒-塗料面向下。蓋上一張紙巾緊貼在魚片上,紙巾上再塗剩餘的味增醃料。蓋上蓋子放進冰箱醃至少16個小時。紙巾可以用紗布取代。
3.取出醃好的魚片,刮去多餘的味增。烤箱預熱到450°F(230°C)。
4.烤盤刷點油後放上魚排,進烤箱烤到魚不再透明,大約6分鐘。然後用最上火500°(260°)烤到頂部呈微焦,大約再7分鐘。

PROCEDURE
1.Prepare the Miso Marinade.
2.Place a paper towel on the bottom of a container. Rinse the fish and pat dry with paper towels. Spread miso marinade on one side of the fish. Add the fish to the container - marinated side facing down. Cover the fish with another paper towel. Gently press the paper towel against the fish tightly. Brush the remaining miso marinade on the paper towel. Cover the container and store it in the fridge for at least 16 hours. The paper towel can be replaced with cheese cloth.
3.Remove the fish from the container. Scrape off excessive miso from the fish. Preheat the oven to 450°F(230°C).
4.Place the fish on a lightly greased baking pan. Bake until the fish is no longer opal, approx. 6 minutes. Then broil the fish over 500°(260°) until top is slightly burnt, approx. another 7 minutes.
