Stir-Fried Beef in Oyster Sauce

Ingredients
Pork loin (cut 5cm x 3cm/2"x1" slices)2/3 lb (300g)
Basic marinade (dark)1 portion
Asparagus (cut 5cm/2" segments)1/2 lb (225g)
Red chili pepper (Cut 2cm/0.75" squares)2 large
Cooking oil2+1 Tbs
Oyster sauce1 portion

Instructions
1.Prepare the Oyster Sauce.
2.Marinate the beef with the Basic Marinade (Dark) for 10 minutes. Thoroughly mix the marinated beef with 2 tbs. of oil right before cooking.
3.Place 1 tbs. of oil and beef in a heated non-stick pan; sauté over high heat until the beef is 60% cooked. Transfer the beef onto a strainer to drain out the blood water and excessive oil.
4.Add part A from the Oyster Sauce and sauté until aromatic. Add asparagus and red chili pepper; stir for several times.
5.Add beef and part B from the Oyster Sauce; quickly stir for 1 minute. Serve immediately.

牛里肌肉 (切 5cm x 3cm/2"x1" 薄片)2/3 磅 (300克)

蘆筍 (切 5cm/2" 小段)1/2 磅 (225克)
紅辣椒 (切 2cm/0.75" 方片)2 個(大)
食用油2+1 大匙
蠔油醬汁1

做法
1.準備蠔油醬汁
2.把牛肉與基本醃料(濃)拌勻後醃10分鐘。要入鍋前加入2大匙油拌勻。
3.將1大匙油和牛肉片放進燒熱的不沾鍋內,用大火快炒到6分熟。盛出放在濾網上過濾掉血水和多餘的油。
4.原鍋加入蠔油醬汁A料爆炒至有香味。加入蘆筍和紅辣椒略炒。
5.加入牛肉和蠔油B料後快速拌炒1分鐘即可起鍋。趁熱食用。
