Stir-Fried Beef in Oyster Sauce

Instructions
1. | Prepare the Oyster Sauce. |
2. | Marinate the beef with the Basic Marinade (Dark) for 10 minutes. Thoroughly mix the marinated beef with 2 tbs. of oil right before cooking. |
3. | Place 1 tbs. of oil and beef in a heated non-stick pan; sauté over high heat until the beef is 60% cooked. Transfer the beef onto a strainer to drain out the blood water and excessive oil. |
4. | Add part A from the Oyster Sauce and sauté until aromatic. Add asparagus and red chili pepper; stir for several times. |
5. | Add beef and part B from the Oyster Sauce; quickly stir for 1 minute. Serve immediately. |

1. | 準備蠔油醬汁。 |
2. | 把牛肉與基本醃料(濃)拌勻後醃10分鐘。要入鍋前加入2大匙油拌勻。 |
3. | 將1大匙油和牛肉片放進燒熱的不沾鍋內,用大火快炒到6分熟。盛出放在濾網上過濾掉血水和多餘的油。 |
4. | 原鍋加入蠔油醬汁A料爆炒至有香味。加入蘆筍和紅辣椒略炒。 |
5. | 加入牛肉和蠔油B料後快速拌炒1分鐘即可起鍋。趁熱食用。 |
