Sautéed Eel with Bean Spout & Yellow Chive

Ingredients
Frozen grilled eel (cut 1.25cm/0.5" wide strips)1/2 lb (225g)
Mung bean sprout (pinch off longer root)1/2 lb (225g)
Yellow chive (cut 4cm/0.75" segments)1/3 lb (150g)
Cooking oil2 Tbs
Salt1/2 tsp
Ground white pepper1/8 tsp

Instructions
1. Place 2 tbs. of oil and bean sprout in a heated wok; sauté over high heat for 20 seconds. Add the yellow chive, salt and white pepper; sauté for another 20 seconds.
2. Put in the eel and sauté until the bean sprout and yellow chive are just cooked through. Serve immediately.

綠豆芽(摘掉根部)1/2 磅 (225克)
韭黃 (切 4cm/0.75"小段)1/3 磅 (150克)
食用油2 大匙
1/2 小匙
白胡椒粉1/8 小匙

做法
1. 鍋燒熱後放進2大匙油和豆芽用大火快炒20秒。加入韭黃,鹽及白胡椒再炒20秒。
2. 加入鰻魚條拌炒到綠豆芽和韭黃脫生後及可起鍋。
