Salt & Pepper Prawns

Ingredients
Prawns (headless with shell)1 lb (450g)
Yam starch (or corn starch)3 Tbs
Cooking oil3 Tbs
Salt & Pepper sauce1 portion

Instructions
1.Cut the back of each prawn open and devein. Pat the prawns dry with paper towels.
2.Place the prawns and yam starch in a plastic bag. Shake the bag to coat each prawn with yam starch.
3.Set the air fryer to 395°F(200°C) and preheat 5 minutes. Brush oil on both sides of each prawn. Fry the prawns in the air fryer for 4 minutes. Turn each prawn over and continue to fry for 4 minutes. If not using air fryer, deep fry the prawns in 375°F(190°C) oil for 3 minutes.
4.While frying the prawns, prepare the Salt & Pepper Sauce.
5.Place Part A and 1/2 of Part B from the Salt & Pepper Sauce in a heated pan; sauté until aromatic. Add the fried prawns and remaining part B from the Salt & Pepper Sauce; stir until the prawns and the sauce are well mixed.

做法
1.每條蝦剪開蝦背,抽出泥腸。用紙巾將蝦擦乾。
2.把蝦和地瓜粉放進一個塑膠袋裡,抖動塑膠袋讓每隻蝦都裹到粉。
3.氣炸鍋設定在395°F(200°C),並預熱5分鐘。將每條蝦兩面都刷上油,放進氣炸鍋炸4分鐘。拿出將蝦子翻面,再進氣炸鍋炸4分鐘。如果沒有氣炸鍋則放進375°F(190°C)油炸3分鐘。
4.炸蝦時準備椒鹽拌汁
5.炒鍋燒熱後加入椒鹽拌汁A料和一半的椒鹽拌汁A料爆香。熄火後再加入炸蝦和剩餘的椒鹽拌汁B料拌勻。
