合菜戴帽 Mix Vegetables Covered with Eggs

材料 Ingredients
A 部份 Part A
綠豆芽 Mung bean sprout 2 杯 cup
韭黃 Yellow chive 1 杯 cup
粉絲 Vermicelli (bean thread) 1 把 bundle
蔥 Scallion1 支 stalk
油 Salt2 大匙 Tbs
鹽 Salt1/3 小匙 tsp
醬油 Soy sauce1/2 大匙 Tbs
無鹽高湯Unsalted stock 4 大匙 tbs
白胡椒 White pepper 1/4 小匙 tsp

B 部份 Part B
菠菜 Spinach 4 杯 cup
乾黑木耳 Wood-ear Fungus1 大匙 tbs
油 Salt1 大匙 Tbs
鹽 Salt1/3 小匙 tsp
香菇精 Mushroom concentrate1/4 小匙 tsp
糖 Sugar1/8 小匙 tsp
C 部份 Part C
蛋 Egg 2 個 each
鹽 Salt1/3 小匙 tsp
油 Salt2 大匙 Tbs

準備
1.將豆芽洗乾淨, 把較長的根部及帶殼的部份摘掉。如果是宴客, 每一根的頭尾都摘除比較好看。粉絲泡軟後切成5cm長段。韭黃洗乾淨切成5cm長段。蔥洗乾切小粒。菠菜洗乾淨切成5cm長段。黑木耳泡軟後切絲。蛋加鹽打散。
做法 – A 部份
2.鍋內將2大匙油燒熱後加入蔥粒爆香。加入粉絲﹐高湯及A料中所有調味料用中火煮到高湯剩下一半。
3.加入豆芽和韭黃用大火快炒到豆芽脫生。
4.將所有材料盛出裝盤。
做法 – B 部份
5.原鍋將1大匙油燒熱後加入木耳絲用大火炒 20秒﹐加入菠菜及B料中所有調味料用大火快炒到菠菜變熟。
6.加入A部份稍微拌一下後裝盤。
做法 – C 部份
7.平底鍋將2大匙油燒熱後倒入蛋汁用中小火煎成一個蛋皮。
8.將蛋皮蓋在炒好的菜上。



PREPARATION
1. Wash the bean sprouts, pinch off the longer roots and husks. For better looking, you can pinch the root and husk out of each single bean sprout, but it takes a lot of time. Soak the bean threads in water until soft. Cut the bean threads into 2" segments. Wash the yellow chives and cut them into 2" segments. Wash the scallion and dice it. Wash the spinach and cut it into 2" segments. Soak the wood-ear fungus until they are soft and shred them. Add 1/3 tsp of salt in 2 eggs and beat them thoroughly.
PROCEDURE – PART A
2.Heat 2 tbs of oil in a wok. Add the onions and stir-fry until aromatic. Add the bean threads, stock and all other seasonings in part A and cook until the stock is reduced to half.
3.Add the bean sprouts and yellow chives. Quickly stir-fry them until the bean sprouts are done but still crispy.
4.Place the vegetables on a plate and put it aside.
PROCEDURE – PART B
5.Heat 1 tbs of oil in the same wok. Add the wood-ear fungus and stir-fry in high heat for 20 seconds. Add the spinach and the seasonings in part B. Continue stir-frying until the spinach is done.
6.Mix in part A in the wok. Place the mixed vegetables on a plate.
PROCEDURE – PART C
7. Heat 2 tbs of oil in a pan. Pour the beaten eggs all over the pan to form a smooth circle. Pan-fry the eggs in medium-low heat until the eggs are lightly brown on the bottom. Turn the eggs over and turn off the heat. Let the remained heat of the pan cook the egg through.
8.Place the egg over the mix vegetables on the plate and serve.
