胡蘿蔔煎蛋 Fan-fried Eggs with Carrot

材料 Ingredients
蛋 Egg 4 個(大) large
胡蘿蔔 Carrot1/3 磅 lb (150g)
油 Cooking oil4 大匙 Tbs
鹽 Salt1/4+1/4 小匙 tsp

做法
1.將胡蘿蔔洗乾淨削皮切成 5cm 細絲。蛋加鹽1/4小匙鹽打散備用。
2.鍋燒熱,加入4大匙油,胡蘿蔔和1/4小匙鹽拌炒到胡蘿蔔變軟。
3.加入蛋液用中火將蛋炒到7成凝固。將蛋翻面火關掉,用鍋子餘溫將蛋煎熟。

PROCEDURE
1.Wash and peel the carrot; cut it into 2" juliennes. Beat the eggs with 1/4 tsp of salt.
2.Place 4 tbs. of oil, carrot and 1/4 tsp. of salt in a heated pan; sauté until the carrot is tender.
3.Add the beaten egg; stir over medium heat until the egg is 70% curdled. Turn over the egg and turn off the heat. Continue cooking the egg with the remained temperature of the pan until it is done.
