Braised Tofu in Brown Sauce

Ingredients
Firm tofu (Horizontally cut in half; cut each half into 8 small triangles)1 pack
Shitake mushroom (quartered)5 medium
Carrot (sliced) 1-1/2 oz (43g)
Snow pea1-1/2 oz (43g)
Garlic (sliced) 2 clove
Scallion (cut 5cm/2" segments)2 stalk
Cooking oil2+1 Tbs
Brown sauce 1 portion

Instructions
1.Prepare the Brown sauce .
2.Place 2 tbs. of oil and tofu triangles in a heated non-stick pan; pan-fry over medium heat until they are golden brown on both sides. Press each piece of tofu on a paper towel before being placed in the pan to avoid oil spilling. Set the tofu aside.
3.Add 1 tbs. of oil, garlic, scallion (white part), shiitake mushroom and carrot in the same pan; sauté for 30 seconds.
4.Add the Brown Sauce and tofu; cook the sauce is reduces to 1/2. Mix in the snow peas and cook for another 2 minutes.
6.Stir in the remain scallion green part and serve immediately.




紅燒豆腐

板豆腐(橫面切成兩片,每片再切成8個三角型)1
香菇(切4等塊)5 朵(中)
紅蘿蔔(切薄片)1-1/2 盎司 (43克)
荷蘭豆1-1/2 盎司 (43克)
大蒜(切薄片)2
蔥(切小段,白綠分開)2
食用油2+1 大匙
紅燒醬汁 1

做法
1.準備紅燒醬汁
2.將2大匙油和豆腐放進燒熱的不沾平底鍋,用中火將兩面煎黃。豆腐要入鍋前先在紙巾上按一下﹐以免油遇水會濺爆。盛出豆腐備用。
3.原鍋加入1大匙,蔥白,大蒜﹐香菇和紅蘿蔔炒30秒。
4.加入紅燒醬汁和豆腐用中火煮到醬汁剩下1/2。拌入荷蘭豆繼續煮2分鐘。
5.撒上剩餘的蔥綠略拌後裝盤。
