做法
1. | 腰子橫切成兩半。 |
2. | 將中間含有腎囊 (深紅色小圓形) 和白筋部份切除乾淨。確定要完全清除否則會有尿騷味。 |
3. | 將清理乾淨的腰子泡在水裡至少 2 個小時。我通常加蓋放在冰箱過夜。 |
4. | 將泡好的腰子用流水沖洗到沒有血水。 |
5. | 腰子放在砧板上﹐光滑面向上。用刀直向輕劃數道﹐每道相間 1cm﹐小心不要劃斷。橫向斜切 2 刀﹐不要切斷﹐再斜切第 3 刀切斷。重複做到整副腰子都切完。 |
Procedure
1. | Horizontally cut each kidney in half. |
2. | Remove the dark red circle part and tiny white tubes. Make sure they are completely removed to avoid a pee smell. |
3. | Soak the kidneys in clean water for at least 2 hours. I usually cover them and store them in a refrigerator overnight. |
4. | Wash the kidneys under running water until the blood is gone. |
5. | To cut criss-cross pattern, place the kidneys on a chopping board with the smooth side facing up. Make a few shallow cuts lengthwise (don’t cut all the way through), approx. 1cm in between each cut. Diagonally slice the kidney crosswise – 1st & 2nd cut only half way through, the 3rd cut all the way off. Repeat until the whole kidney is cut. |
