(Shiitake Mushroom/Bean Curd/Shepherd's Purse/Carrot)


Ingredients
Dried shiitake mushroom8 small
Dried bean curd stick3 large stick
Frozen (or blanched) shepherd's purse1 lb (450g)
Carrot1/4 lb (125g)
Ground meat marinade (light)1 portion
Sweeten soybean sauce1 Tbs

Note: Shepherd's purse can be replaced with other leafy vegetables. Its weight is the weight after blanching and squeezing. The sweeten soybean paste can be replaced with oyster sauce.

Instructions
1.Soak the shiitake mushrooms in water until rehydrated; remove the hard stems and chop the mushrooms into tiny pieces with a food processor or knife.
2.Soak the dried bean curd sticks in hot water until rehydrated. Chop them into tiny pieces with a food processor or knife.
3.Defrost shepherd's purse; squeeze dry and chop it into tiny pieces.
4.Peel the carrot and grate it into tiny pieces.
5.Prepare the Ground Meat Marinade (Light), omit the 6 tbs. of water in the recipe.
6.Place shepherd's purse, shiitake mushroom, bean curd, caroot, ground meat marinade and sweeten soybean paste in a mixing bowl. Use several chopsticks to stir the mixture vigorously until all the liquid is absorbed. You can also use a mixer with a flat beater to mix the vegetables. This recipe will produce approx. 2 lbs. (900g) of filling.

註: 薺菜可以用其它葉菜類替代,其重量是燙過水擠乾後的重量。甜麵醬可以用蠔油替代。

做法
1.香菇泡軟後剪去硬蒂,用食物處理機或刀切成小丁。
2.腐竹用熱水泡軟後,用食物處理機或刀切成小丁。
2.把薺菜解凍,擠乾後切碎。
2.準備絞肉醃料(淡),省略配方中的6大匙水。
3.將薺菜,香菇,腐竹,胡蘿蔔,絞肉醃料(淡)和甜面醬放進一個大盆,用多雙筷子用力攪拌到所有液體都被吸收。也可以放進攪拌機用槳狀腳拌勻。此配方大約做出2磅(900克)的餡。
