做法
1. | 將干貝用水沖洗乾淨後泡在水裡﹐水要蓋過干貝。加入2大匙米酒後泡30分鐘。 |
2. | 將干貝連泡的水放進電鍋或蒸籠裡蒸30分鐘。 |
3. | 將湯汁倒出可做為高湯。 |
4. | 輕壓每個干貝後再將干貝捏成粗條。若要用整顆干貝則省略此步驟。 |
Procedure
1. | Wash the dried scallops and soak them in cold water. The water must cover the dried scallops. Add 2 tbs. of rice wine and soak for 30 minutes. |
2. | Steam the scallops with water in a rice cooker or steamer for 30 minute. |
3. | Drain the scallops and reserve the liquid for a stock. |
4. | Gently press each scallop and twist the scallops into strips. Skip this step if you want to use the whole scallop. |
