韭菜粉絲豆干蛋餡 Garlic Chive/Bean Thread/Bean Curd/Egg Filling

材料 Ingredients
韭菜 Garlic chive 1 磅 lb (450g)
蛋 Egg 4 個 each
粉絲 Bean thread 2 把 bundle
豆干 Bean curd 6 塊 each
蝦皮 Tiny shrimp skin 2/3 杯 cup
鹽 Salt1-1/2 小匙 Tbs
糖 Sugar2/3 大匙 Tbs
白胡椒 White pepper1/4 小匙 tsp
麻油 Sesame oil 1 大匙 Tbs
食用油 Cooking oil 3 大匙 Tbs

做法
1.三大匙油燒熱﹐加入個蛋炒熟。將蛋切成細丁。
2.韭菜洗乾淨切成小粒。
3.粉絲用水泡軟後剪成 2cm小段。
4.豆干切成 0.5cm x 0.5cm小丁後和蝦皮一起在剛剛炒蛋的鍋內炒香﹐不要加油。
5.將所有材料拌勻備用。



Procedure
1.Scramble 4 eggs with 2 tbs OF oil. Mince the eggs.
2.Wash and dice the garlic chives.
3.Soak the bean threads in water until soft. Cut them into 2cm segments.
4.Cut the bean curds into 0.5cm x 0.5cm pieces. Stir-fry the bean curds and shrimp skin in the pan that you just scrambled the eggs until aromatic – don’t add oil.
5.Mix all the ingredients in a big bowl until well combined.
