Instructions
1. | Prepare the Ground Meat Marinade (Dark). |
2. | Wash the spoon cabbage leaf by leaf. Cut the spoon cabbagey roughly into pieces and place them in a food processor. Use the "pulse" function to chop the spoon cabbage into tiny pieces. If you don't have a food processor, chop up the spoon cabbage by using a knife. |
3. | Mix the spoon cabbage with 2 tsp. of salt. Set it aside for 30 minutes and let it release its juice. |
4. | Put the spoon cabbage in a cheese cloth bag and squeeze it dry. |
5. | Place the spoon cabbage, ground pork, minced scallion, grated ginger and the Dark Ground Meat Marinade in a big bowl. Use several chopsticks to stir the mixture vigorously until all the liquid is absorbed. You can also use a mixer with a flat beater to mix the ground pork. This recipe will produce approx. 2 lbs. (900g) of filling. |

2. | 青江菜逐葉洗乾淨,切成小塊。將青江菜放進食物調理機,用Pulse功能將之打碎。沒有食物調理機也可以用刀剁碎。 |
3. | 將青江菜與2小匙鹽拌勻,放置一旁30分鐘讓其出水。 |
4. | 把青江菜放入紗袋中擠乾。 |
5. | 擠乾的青江菜與絞肉,蔥花,薑泥和絞肉醃料放進一個大盆,用多雙筷子用力攪拌到所有液體都被吸收。也可以放進攪拌機用槳狀腳拌勻。此配方大約做出2磅(900克)的餡。 |
