Leafy Green Vegetables & Meat Filling

Ingredients
Ground pork (or any other kind of ground meat)2/3 lb (300g)
Spoon cabbage (or any other kind of leafy green vegetable)1-1/2 lb (675g)
Salt2 tsp
Diced scallion 1/2 cup
Grated ginger2 tsp
Ground meat marinade (dark)1portion

Instructions
1.Prepare the Ground Meat Marinade (Dark).
2.Wash the spoon cabbage leaf by leaf. Cut the spoon cabbagey roughly into pieces and place them in a food processor. Use the "pulse" function to chop the spoon cabbage into tiny pieces. If you don't have a food processor, chop up the spoon cabbage by using a knife.
3.Mix the spoon cabbage with 2 tsp. of salt. Set it aside for 30 minutes and let it release its juice.
4.Put the spoon cabbage in a cheese cloth bag and squeeze it dry.
5.Place the spoon cabbage, ground pork, minced scallion, grated ginger and the Dark Ground Meat Marinade in a big bowl. Use several chopsticks to stir the mixture vigorously until all the liquid is absorbed. You can also use a mixer with a flat beater to mix the ground pork. This recipe will produce approx. 2 lbs. (900g) of filling.

做法
1.準備絞肉醃料(濃)
2.青江菜逐葉洗乾淨,切成小塊。將青江菜放進食物調理機,用Pulse功能將之打碎。沒有食物調理機也可以用刀剁碎。
3.將青江菜與2小匙鹽拌勻,放置一旁30分鐘讓其出水。
4.把青江菜放入紗袋中擠乾。
5.擠乾的青江菜與絞肉,蔥花,薑泥和絞肉醃料放進一個大盆,用多雙筷子用力攪拌到所有液體都被吸收。也可以放進攪拌機用槳狀腳拌勻。此配方大約做出2磅(900克)的餡。
