註:配方中的水可以用牛奶或豆漿替代,這樣做出的成品較白。此麵團重量大約是720克。
Note: You can substitute water with milk or soybean milk. Milk or soybean milk makes the final product whiter. The weight of this dough is approx. 720g.
做法:
1. | 將水,速發酵母,麵粉,糖,鹽,油依序放入攪拌缸。天氣冷請用溫水,天氣熱則用冰水。麵粉在麵粉桶裡翻鬆後舀出,不需過篩。 |
2. | 攪拌機裝上勾狀腳,先用速度2打2分鐘, 再以速度4打約10分鐘直到麵團變成光滑不黏手 (我用Kitchenaid 攪拌機)。 |
3. | 麵團蓋上保潔膜。先將1杯水在微波爐內微2分鐘,再將麵團放進微波爐,關上門發酵到變成兩倍大,約1個小時。發酵好的麵團用手指插進去會有個洞。 |
Instructions:
1. | Place the water, yeast, flour, sugar, salt and oil in order into the mixing bowl. Use warm water if the weather is cold. On the other hand, use cold water if the weather is hot. Stir the flour in the container several time to make it loose. You don’t need to sift the flour. |
2. | Install a dough hook to the mixer and knead the mixture at speed 2 for 2 minutes. Continue kneading at speed 4 until the dough is smooth and does not stick to your fingers (approx. 10 minutes). I use a Kitchenaid mixer. |
3. | Cover the dough with a piece of plastic food wrap. Heat 1 cup of water in the microwave for 2 minutes, then place dough in the microwave and close the door. Let it rise until doubles in size (approx. 1 hour). Insert one finger in the dough, if the indentation remains, then the dough is done ripe. |
