做法
1. | 豬肉切去白筋和肥肉的部份﹐切成 5cm 細絲。榨菜和紅辣椒青椒洗乾淨後也切成 5cm 細絲。大蒜剁碎。 |
2. | 肉絲用基本醃料醃 10 分鐘。要炒前拌入 1 大匙油。 |
3. | 鍋燒熱後加入1 大匙油。 加入肉絲炒到變白後馬上盛出﹐大約 8 分熟。 |
4. | 原鍋加熱 1 大匙油。倒入榨菜絲﹐辣椒絲和大蒜﹐加鹽用中火炒到大蒜微黃。加入肉絲拌炒數下後即可起鍋。 |
PREPARATION
1. | Cut any fat or tendons off the pork. Shred the pork into 2" thin strips. Wash the Chinese pickled mustard and the chili pepper. Julienne them into 2" pieces. Mince the garlic. |
2. | Marinate the shredded pork with the Basic Marinade for 10 minutes. Mix the pork with 1 tbs of oil before stir-frying. |
3. | Heat 1 tbs of oil. Add the shredded pork and stir-fry until the pork turns white, approx. 80% done. Set the pork aside. |
4. | Heat 1 tbs of oil in the same wok. Add the Chinese pickled mustard, chili pepper, garlic and salt. Stir-fry in medium heat until the garlic turns light brown. Mix in the shredded pork and stir several times. Serve hot. |
