做法
1. | 蓮藕削皮切成薄片後馬上將放進醋水中(1大匙醋+3杯水)以免發黑。黑木耳用水泡軟後沖洗乾淨。大朵的撕成兩半。甜豆洗乾淨將兩頭及邊邊的老絲撕掉。大蒜拍碎﹐紅辣椒去籽切成粒。 |
2. | 將麻辣醬汁準備好﹐將大蒜和辣椒加入麻辣醬汁中。 |
3. | 燒開2/3鍋的水。先放進藕片燙3分鐘﹐再加入木耳和甜豆繼續燙1分鐘。 |
4. | 撈出藕片﹐木耳和甜豆放進冰水中。等到三樣都涼透了﹐將水濾乾放進碗裡。 |
5. | 將藕片﹐木耳和甜豆與麻辣醬汁拌勻即可。 |
PROCEDURE
1. | Peel and thinly slice the lotus root. Place the lotus root in a bowl of vinegar water (1 tbs of vinegar + 3 cups of water) to prevent the lotus root from turning black. Soak the wood-ear fungus in water until it is soft. Tear the large ones in half. Wash the sugar peas and snap the top of each pod off. Crush the garlic. Seed and slice the red chili pepper. |
2. | Prepare the Hot Spicy Sauce. Add the garlic and chili pepper to the sauce. |
3. | Bring a 2/3-full pot of water to a boil. Add the lotus root slices and blanch for 2 minutes. Then add the wood-ear fungus and sugar peas. Continue cooking for another minute. |
4. | Transfer the lotus root slices, wood-ear fungus and sugar peas to a bowl of ice water. When they completely cool down, drain the water and transfer them to a bowl. |
5. | Mix the lotus root slices, wood-ear fungus and sugar peas with the Hot Spicy Sauce. Serve cold. |
