做法
1. | 茄子洗乾淨後切掉頭部,再直切成兩半,共4片。用刀尖在每片茄子切面上劃上格子刀紋。 |
2. | 把1/3 味增醃料塗在茄子上,刀縫處多塗一些。 |
3. | 烤盤燒熱後噴上少許油。 |
4. | 將茄子排列在烤盤上,切面向下皮向上。把1/3的味增醃料刷在茄子皮上。烤盤蓋上錫箔紙後用中小火炙5分鐘。 |
5. | 拿開錫箔紙,將茄子翻面。 刷上剩餘的味增醃料後繼續用中小火炙烤5 分鐘即可裝盤。 |
6. | 將蔥花,香菜丁和芝麻均勻地撒在茄子上。上桌前可將茄子切成小段比較容易食用。 |
PROCEDURE
1. | Wash the eggplants and cut off the top part. Cut each eggplant lengthwise in half. Use the tip of a knife to score a crisscross pattern on the eggplant flesh. |
2. | Brush 1/3 of the Miso Marinade on the flesh side of the eggplants, deep down into the cuts. |
3. | Heat a grill pan, then spread some PAM oil over the pan. |
4. | Place the eggplants on the grill pan, flesh side down. Brush 1/3 of the Miso Marinade on the skin of the eggplants. Cover the eggplants with a piece of foil. Grill the eggplants at medium-low heat for 5 minutes. |
5. | Remove the foil and turn the eggplants over. Brush the remaining Miso Marinade on the eggplants. Continue grilling the eggplants at medium-low heat for another 5 minutes. |
6. | Transfer the eggplants to a plate. Sprinkle the minced scallions, diced cilantro and white sesame on top of the eggplants. Cut the eggplants into small pieces before serving. |
