金菇絲瓜 Sautéed Angled Loofah with Enoki Mushrooms

材料 Ingredients
澎湖絲瓜 Angled Loofah2 磅 lb (900g)
金針菇 Enoki mushroom 1 包 pack
薑 Ginger 2 片 slice
鹽 Salt 1/2 小匙 tsp
水 Water 1/2 杯 cup
食用油 cooking oil 1 大匙 Tbs

做法
1.絲瓜削皮後切成3cm x 5cm小塊。將金針菇底部切掉﹐略為沖洗一下。薑片切成細絲。
2.炒鍋燒熱後加入1大匙油。加入薑絲煎香。
3.加入絲瓜,金針菇,水和鹽後略為拌炒。蓋上鍋蓋用中小火燜煮2分鐘,或煮到你喜歡絲瓜的軟度。



PROCEDURE
1.Peel the angled loofahs and cut them into 1"x2" chunks. Cut off the bottom of the enoki mushrooms and wash them roughly. Cut the ginger into thin strips.
2.Add 1 Tbs. of oil to a heated wok. Add the ginger and sauté until aromatic.
3.Add the angled loofahs, enoki mushrooms, water and salt to the wok and stir several times. Cover and simmer at medium-low heat for 2 minutes, or until the loofahs reach the desired tenderness.
