韭黃香菇蝦仁餡 Shrimp, Yellow Chives & Mushroom Filling

材料 Ingredients
蝦仁 Shelled shrimp1 磅 lb (450 g)
韭黃 Yellow chive 1/3 磅 lb (150 g)
新鮮香菇 Fresh shitake mushroom 10 朵 ea
絞肉 (淡)醃料 Light Ground Meat Marinade 1 份 portion
淡醬油 Light soy sauce1 大匙 Tbs

做法
1.將蝦用水沖洗後抽掉砂腸﹐確定所有的黏液都沖洗掉。將蝦仁切成小丁。韭黃洗乾淨後切小粒。香菇洗乾淨後馬上擦乾。去掉硬蒂後切成小丁。
2.將所有材料放在大盆中,用多雙筷子用力攪拌到所有液體都被吸收。也可以放在攪拌機中,用漿狀腳攪拌。



PROCEDURE
1.Devein and rinse the shrimps. Make sure that all the mucus on the body are gone. Dice the shrimps. Rinse and dry the mushrooms. Remove the wooden stems and cut them into dice size. Rinse and dice the yellow chives.
2.Place all the ingredients in a big bowl. Use several chopsticks to stir the mixture vigorously until all the liquid is absorbed. You can also use a mixer with flat beater to mix the filling.
