乾粉香精液體油脂
基本牛油蛋糕 1杯中筋麵粉+1/4小匙鹽+1小匙泡打粉+1/2小匙蘇打粉3個全蛋3/4杯白糖1小匙香草精1/2杯酸奶油1/2杯融化牛油
巧克力蛋糕 3/4杯中筋麵粉+1/4杯無糖可可粉+1/4小匙鹽+1小匙泡打粉+1/2小匙蘇打粉3個全蛋1/2杯白糖+1/4杯黃糖1/2小匙香草精1/2杯滾水+1小匙即溶咖啡粉+1/4杯苦甜巧克力1/3杯蔬菜油
香蕉蛋糕 1杯中筋麵粉+1/4小匙鹽+1小匙泡打粉+1/4小匙肉桂粉3個全蛋1/2杯白糖1/2小匙香草精2根香蕉(壓成泥)+1/2杯碎核桃(裹薄麵粉) 1/2杯融化牛油
檸檬罌粟籽蛋糕 1杯中筋麵粉+1/4小匙鹽+1小匙泡打粉+1/2小匙蘇打粉3個全蛋3/4杯白糖1/2小匙香草精1/4杯酸奶油+1/4杯檸檬汁+1大匙罌粟籽+2大匙檸檬皮屑1/2杯融化奶油
註:

1.用低筋麵粉取代中筋麵粉會讓蛋糕比較鬆軟。1杯低筋麵粉=1杯中筋麵粉減2大匙中筋麵粉加2大匙玉米粉。
2.牛油可以用白油或植物油取代。
3.白糖可用麥芽糖﹐黑糖﹐蜂蜜﹐楓糖和其它糖類來變換口味。

Banana Cake 1 cup all-purpose flour +1/4 tsp salt + 1 tsp baking powder + ¼ tsp ground cinnamon 3 eggs (or 2 jumbo eggs)1/2 cup granulated sugar 1/2 tsp vanilla extract 2 large banana (pureed) + ½ cup chopped walnuts (coated with a thin layer of flour) 1/2 cup melt butter
Lemon Poppy Seeds Cake 1 cup all-purpose flour + ¼ tsp salt + 1 tsp baking powder + ½ tsp baking soda 3 eggs 3/4 cup granulated sugar 1/2 tsp vanilla extract 1/4cup sour cream + ¼ cup lemon juice + 1 Tbs poppy seeds + 2 Tbs lemon zest 1/2 cup melted butter
Note:

1. Replace all-purpose flour with cake flour to make the cake fluffier. 1 cup of all-purpose flour = 1 cup all-purpose flour less 2 tbs. all-purpose flour plus 2 tbs. corn starch.
2. The butter can be substituted with shortening or botanical oil.
3. You can replace the granulated sugar with maltose, brown sugar, honey, maple syrup..etc. to create different flavors.
