做法
1. | 將魚用紙巾擦乾後兩面撒上適量的調味粉。(例如:鹽和胡椒,Lowry's 調味鹽,任何香料,任何乾香草..等等) |
2. | 煎鍋燒到非常熱後加入2大匙油。放進魚排用中大火煎2分鐘,當中不要移動魚排。將魚排翻面,繼續用中火煎2分鐘。(註:如果用高脂肪的魚如鮭魚,鱈魚等,油量減少到1大匙。) |
3. | 淋上白酒和檸檬汁。加蓋燜煮-煮的時間:1.3cm 厚-1分鐘;1.9cm厚-2分鐘;2.5cm厚-3分鐘..每0.6cm增加1分鐘。 |
PROCEDURE
1. | Dry the fish fillet with paper towels. Season both sides with proper amount of seasoning (e.g. salt & pepper; Lowry's seasoned salt; any spices; any dried herb…etc.) |
2. | Heat a pan until very hot. Add 2 tbs. of cooking oil. Place in the fish fillet and pan-fry in medium-high heat for 2 minutes. Do not move the fish. Turn the fish over. Continue to pan-fry in medium-high heat for another 2 minutes. (Note: If cooking high-fat fish such as salmon or turbo fish, decease the oil to 1 tsp.) |
3. | Pour in the white wine and lemon juice. Cover and cook for the following time: 1 min. for 0.5"thick; 2 min. for 0.75"; 3 min. for 1"….add 1 minute for every 0.25".) |
