XO醬茄子 Eggplants in XO Sauce

材料 Ingredients
茄子 Chinese Eggplant1 條 ea
食用油 Cooking oil 2+1 大匙 Tbs
XO醬 XO sauce 2 大匙 Tbs
蒜末 Minced garlic 1 大匙 Tbs
醬油 Soy sauce 1 大匙 Tbs
糖 Sugar 1/2 小匙 tsp
水 Water 1/4 杯 cup
蔥花 Minced scallion2 大匙 Tbs

做法
1.茄子洗乾淨後切成6cm小段,每段再直切成四份。
2.將茄子排列在微波爐適用的容器內,皮向上。茄子皮刷上薄薄一層油後加蓋,放進微波爐用最強火微兩分鐘。
3.炒鍋燒熱後,加入1大匙油。放進XO醬,蒜末,醬油和糖用中火翻炒一分鐘。加入1/4杯水,煮滾後加入茄子翻炒到醬汁剩下一半。
4.熄火後拌入蔥花。



PROCEDURE
1.Wash the eggplant. Cut it into 2.5" segments then cut each segment lengthwise into four pieces.
2.Lay the eggplant into a microwave safe container, skin side up. Brush the eggplant with a thin layer of oil. Cook the eggplant in hight heat for two minutes.
3.Add 1 tbs. of oil in a heated wok. Place in the XO sauce, minced garlic, soy sauce and sugar. Sauté over the medium heat for 1 minute. Add ¼ cup of water. When the sauce is boiling, add the eggplant. Stir fry until the sauce is reduced to half.
4. Turn off the heat and stir in the minced scallions.
