馬格麗特披薩 Margherita Pizza

材料 Ingredients
披薩麵團 Pizza dough 1/3 份 portion
羅馬番茄 Roma tomato 3 個 ea
羅勒葉 Basil leaf 1/4 杯 cup
馬茲瑞拉起司Mozzarella cheese6 盎司oz (190 克g)
橄欖油 Olive oil 2 大匙 Tbs
鹽 Salt1/4 小匙 tsp
黑胡椒 Black pepper 1/8 小匙 tsp
玉米粉 Cornmeal 1 大匙 Tbs
12" 披薩烤盤 12" Pizza pan 1 片 pc


做法
1.烤箱預熱到最高溫(我用循環555°F(290°C))。
2.番茄切成0.25" (0.6cm)厚片,羅勒葉撕成小塊(保留一些切碎最後裝飾用),馬茲瑞拉起司切成薄片。
3.工作檯撒些麵粉,將麵團擀成12" (30cm)圓片,不圓沒有關係。
4.批薩烤盤上撒些玉米粉。將麵片移轉到披薩烤盤上。
5.用手指尖捏/推高麵團邊緣。
6.將橄欖油均勻地塗在麵皮上。
7.依序均勻地放上2/3的起司,羅勒葉,番茄片和剩餘1/3的起司,鹽和黑胡椒。邊緣留1" (2.5cm)空白。
8.披薩放進烤箱底層烤約6分鐘(請根據你的烤箱性能自行調整溫度)。
9.取出披薩,撒上碎羅勒葉。等三分鐘後再切。



PROCEDURE
1.Preheat the oven to the highest temperature. (I use convection 555°F(290°C))。
2.Cut the tomatoes into 0.25" (0.6cm) thick slices. Tear the basil into small pieces (mince and reserve some for final garnish.). Cut the Mozzarella cheese into thin slices.
3.Flour your working space and roll out the dough into a 12" (30cm) disk. It is not necessary to be a perfect circle.
4.Sprinkle cornmeal on a pizza pan then transfer the dough onto the pan.
5.Use your finger tips to pinch/push the edge of the crust up all the way around.
6.Brush the olive oil all over the crust.
7.Place the toppings in the order of 2/3 of the cheese, basil, tomato, 1/3 of the cheese, salt and black pepper. Leave 1" of the edge blank.
8.Place the pizza pan on the bottom rack of the oven and bake for 6 minutes (Please adjust your time according to your oven function.).
9.Remove the pizza from the oven and sprinkle with minced basil. Wait for 3 minutes before cutting it into slices.
