做法﹕
1. | 準備好韓式燒醬 。舀2大匙韓式燒醬与牛肉絲拌勻,放在一旁醃10分鐘。 |
2. | 燒開一鍋水。菠菜洗乾淨後放入滾水中燙45 秒後放在冷水裡沖涼。擠乾水份後切成小段。將菠菜与1/4小匙鹽和1小匙蒜末拌勻。 |
3. | 粉絲放進煮菠菜的水裡依照包裝指示煮軟,大約10分鐘。濾乾水份後將粉絲剪成18cm小段。加入1大匙麻油与粉絲拌勻。 |
4. | 將2大匙油和醃好的牛肉絲放進燒熱的炒鍋內用中火炒到8分熟。盛出放在一旁。 |
5. | 原炒鍋放入2大匙油和洋蔥用中火炒1分鐘,續加胡蘿蔔絲,香菇絲,紅椒絲和2大匙的調味醬再炒1分鐘。 |
6. | 轉小火。加入粉絲,牛肉絲和剩餘的調味醬翻炒到肉熟。 |
7. | 熄火。拌入菠菜和1大匙麻油即可。 |
PROCEDURE:
1. | Prepare Korean stir-fried sauce . Mix 2 tbs. of the sauce with the beef strips in a small bowl and marinate for 10 minutes. |
2. | Boil a pot of water. Wash the spinach and blanch in the hot water for 45 seconds. Shock the spinach in cold water then squeeze it dry. Mix the spinach with ¼ tsp. of salt and 1 tsp. of minced garlic. |
3. | In the same pot, follow the package instruction to cook the glass noodles until soft, approx. 10 minutes. Drain the water and scissor the noodle into 5" segments. Mix the noodles with 1 tbs. of sesame oil. |
4. | Add 2 tbs. of oil and the marinated beef in a heated wok and stir fry over medium heat until the beef is 80% done. Set the beef aside. |
5. | Add 2 tbs. of oil and onion in the same wok and sauté over medium heat for 1 minute. Add the carrot, mushroom, red pepper and 2 tbs. of Korean Stir-Fried Sauce and sauté for another minute. |
6. | Turn the heat to low. Add the glass noodles, beef and the remaining sauce. Stir until the beef is completely cooked. |
7. | Turn the heat off. Stir in the spinach and 1 tbs. of sesame oil. |
