韓式高湯 Korean Style Stock

材料 Ingredients
乾海帶 Dried Kelp 1 小塊 piece
乾香菇 Dried shitake mushroom 2 朵 ea
小魚乾 Dried anchovy 1/4 杯 cup
水 Water 6 杯 cup

做法﹕
1.海帶用濕紙巾擦乾淨。小魚乾和香菇用水沖洗乾淨。
2.將所有材料放入鍋燒滾後撇去浮在湯上的渣滓。轉小火加蓋煮15分鐘。
3.撈出海帶,香菇和小魚乾(可做其它用途)。用濾網過濾掉雜質後即可使用。



Procedure:
1.Wipe the kelp with damp paper towels. Rinse the dried anchovies and mushrooms.
2.Place all the ingredients in a pot and bring the mixture to a boil. Skim off any foam on the surface. Turn the heat to low. Cover and cook for 15 minutes.
3.Discard the kelp, anchovies and mushrooms (reserve for other use). Pour the soup base through a strainer to filter out small particles.
