Sautéed Chinese Bacon with Garlic Green

Ingredients
Chinese Bacon 1/2 lb (225g)
Rice wine1 Tbs
Garlic green 6 stalk
Red chili pepper 2 ea

Instructions
1.Rinse the Chinese bacon. Mix the bacon with 1 tbs. of rice wine in a bowl then steam for 30 minutes.
2.Trim off the root end of each garlic green and diagonally cut each into small segments. Sliced the chili pepper crosswise.
3.Remove the bacon from the steamer and cut it into 0.5" thick slices. Reserve the fat and juice in the bowl.
4.Add the fat and juice from the steamed bacon into a heated wok. Place in the garlic green and chili pepper; quickly stir for several times. Add the bacon and continue to sauté until the garlic green starts to become tender. (Note: I don't add any seasoning because Chinese Bacon is already seasoned with lots of salt.)

臘肉1/2 磅 (225克)
米酒1 大匙
蒜苗6
紅辣椒 2

做法
1.臘肉洗乾淨後與米酒在碗裡拌勻,放進蒸籠裡蒸30分鐘。
2.蒜苗去頭切成斜段,紅辣椒橫切成小片。
3.取出蒸好的臘肉切成1cm厚薄片。保留碗裡的油脂和湯汁
4.炒鍋燒熱後倒入整臘肉流出的油脂和湯汁。加入蒜苗和辣椒快炒數下後倒進臘肉。翻炒至蒜苗稍微變軟即可。(註:一般臘肉都很鹹,所已此菜不再另行調味。)
