南洋碎牛肉沙拉 Larb (Ground Beef Salad)

材料 Ingredients
絞牛肉 Ground beef1 磅 lb (450g)
魚露 Fish sauce2 大匙 Tbs
新鮮萊姆汁 Fresh lime juice4大匙 Tbs
碎辣椒 Red chili flake1 小匙 tsp
糖 Sugar1/2 小匙 tsp
紅洋蔥(切絲) Red onion (julienne)1/2 杯 cup
香菜(略切) Cilantro (roughly cut)1/4 杯 cup
薄荷葉(略切) Mint leaves (roughly cut)1/4 杯 cup
蔥花 Minced scallion2 大匙 Tbs
碎米 Ground roasted rice 2 大匙 Tbs

做法
1.將魚露,萊姆汁,碎辣椒和糖放進鍋裡燒滾後加入絞牛肉用中火炒到絞肉全部散開以及醬汁收乾。
2.熄火後拌入紅洋蔥絲,香菜,薄荷葉,蔥花和碎米即可。



PROCEDURE:
1.Place the fish sauce, lime juice, chili flakes and sugar in a pan and bring the mixture to a boil. Add the ground beef and stir over medium heat util the ground beef is completely loosen and the sauce is evaporated.
2.Turn the heat off and mix in the red onion, cilantro, mint leaves, scallion and ground roasted rice.
