墨西哥炊飯 Mexican Rice

材料 Ingredients
長米 Long-grain rice 2 杯 cup
特級初榨橄欖油 Extra virgin olive oil 1/4 杯 cup
黃洋蔥 Yellow onion1/4 個 ea
大蒜 Garlic 1 瓣 clove
番茄膏 Tomato paste 1 大匙 Tbs
鹽 Salt1/2 小匙 tsp
墨西哥雞粉 Caldo de Pollo1 大匙 Tbs
水 Water2 杯 cup

做法﹕
1.米略為沖洗後濾乾。將洋蔥,大蒜,番茄膏和1/4杯水放進食物處理機打成泥。
2.將橄欖油加入厚底鍋內燒熱,倒進米用中大火炒到米變成金黃色,約4分鐘。
3.加入1項醬泥翻炒30秒後加入剩餘的水,鹽和雞粉拌勻。
4.等燒滾後,轉最小火加蓋煮20分鐘。熄火後再燜10分鐘。
5.用叉子將飯翻鬆即可。



PROCEDURE:
1.Rinse the rice and drain the water. Puree the onion, garlic, tomato paste and 1/4 cup of water in a food processor.
2.Heat the olive oil in a heavy duty pot. Add the rice and stir over medium-high heat until the rice is golden brown, approx. 4 minutes.
3.Add the puree from step 1 and stir for 30 seconds. Mix in the rest of the water, salt and Caldo de Pollo.
4.Bring the mixture to a boil. Turn the heat to the lowest, cover and cook for 20 minutes. Turn off the heat and let it sit for another 10 minutes.
5.Fluff the rice with a fork.
