墨西哥燉黑豆 Mexican Style Black Beans

材料 Ingredients
罐頭黑豆 Canned black bean (15.5盎司oz)2 罐 can
特級初榨橄欖油 Extra virgin olive oil 1 大匙 Tbs
洋蔥 (細丁) Onion (finely diced) 1/4 杯 cup
大蒜末 Minced garlic 2 大匙 Tbs
墨西哥醃料 Mexican rub 1 大匙 Tbs
西式雞高湯 Western Chicken Stock 1 杯 cup
鹽 Salt3/4 小匙 tsp
黑胡椒 Ground black pepper 1/4 小匙 tsp
香菜末 Minced cilantro3 大匙 Tbs

做法﹕
1.炒鍋燒熱後放進橄欖油,洋蔥和大蒜用中火炒到洋蔥變成透明。
2.加入黑豆稍微攪拌一下。
3.倒入雞高湯,墨西哥醃料,鹽,黑胡椒和香菜末並攪拌均勻。煮滾後撇去浮在湯上的泡沫和渣滓。
4.加蓋繼續用小火煮30分鐘,不時攪拌一下。



PROCEDURE:
1.Add olive oil, onion and garlic to a heated pan. Sauté until the onion is translucent.
2.Add the black beans and stir briefly.
3.Mix in the chicken stock, Mexican marinade, salt, black pepper and cilantro. Bring the mixture to a boil then skim off the foams at the surface of the soup.
4.Cover and cook over low heat for 30 minutes, stir occasionally.
