泰式打拋豬 Pad Krapao Moo (Stir-fried Pork with Holly Basil)

材料 Ingredients
大蒜(切碎) Garlic (minced)6瓣 clove
紅辣椒(切細丁) Red chili pepper (chopped)4 條 ea
紅蔥頭(切細丁) Shallot (chopped)1 個(大) large
食用油 Cooking oil2 大匙 Tbs
水 Water1/4 杯 cup
豬絞肉 Ground pork1 磅 lb (450g)
生抽 Light soy sauce1 大匙 Tbs
老抽 Dark soy sauce1 大匙 Tbs
蠔油 Oyster sauce1-1/2 大匙 Tbs
魚露 Fish sauce1 大匙 Tbs
椰糖 Palm sugar1/2 大匙 Tbs
打拋葉(切碎) Holly Basil (chopped)1/2 杯 cup

註: 如果買不到打拋葉和椰糖,可用九層塔和黃糖分別取代。
Note: If the holly basil and palm sugar are not available, substitute with Thai basil and brown sugar respectively.

做法
1.炒鍋燒熱後加入2大匙油,大蒜,紅辣椒,紅蔥頭炒香。
2.加入1/4杯水和絞肉,繼續炒到絞肉全部散開。
3.最後加入生抽,老抽,蠔油,椰糖和打拋葉炒勻即可。



PROCEDURE:
1.Add 2 tbs. of oil, garlic, red chili, shallot in a heated wok and suaté until aromatic.
2.Add 1/4 cup of water and the ground pork and stir util the ground beef is completely loosen
3.Add the light soy sauce, dark soy sauce, oyster sauce, palm sugar and holly basil and mix well.
