Lobster and Abalone Platter

Instructions
1. | Boil 2/3 full pot of water. Put in the scallion, ginger and rice wine; cook for 1 minute. Turn the heat down to low. Add the lobster tails and simmer for 16 minutes. (Note: The cooking time for lobster tail is 1 minute per ounce/28g. The total weight of the lobster tails in this recipe is 1 pound/450g, the cooking time is 16 minutes.) |
2. | Remove the lobster tails and let them sit for 10 minutes. Cut the shell of each tail open to remove the meat. Cut the meat into 1.25cm/0.5" wide slices. |
3. | Cut the abalone into thin slices. Reserve the juice in the can for other dish. |
4. | Arrange the sliced lobster and abalone around a plate. Add mayonnaise in zigzag lines. |
