Lobster and Abalone Platter

Ingredients
Lobster tail (thawed)4 each (1 lb/450g)
Canned Abalone (prefer Calmex brand)1 can (1 lb/450g)
Scallion2 stalk
Ginger2 large slice
Rice wine1 Tbs
Mayonnaise right amount

Instructions
1.Boil 2/3 full pot of water. Put in the scallion, ginger and rice wine; cook for 1 minute. Turn the heat down to low. Add the lobster tails and simmer for 16 minutes. (Note: The cooking time for lobster tail is 1 minute per ounce/28g. The total weight of the lobster tails in this recipe is 1 pound/450g, the cooking time is 16 minutes.)
2.Remove the lobster tails and let them sit for 10 minutes. Cut the shell of each tail open to remove the meat. Cut the meat into 1.25cm/0.5" wide slices.
3.Cut the abalone into thin slices. Reserve the juice in the can for other dish.
4.Arrange the sliced lobster and abalone around a plate. Add mayonnaise in zigzag lines.

做法
1.煮滾2/3大鍋水,放進蔥薑和米酒煮1分鐘。加入龍蝦尾,用小火煮16分鐘。 (註:每1盎司/28克煮1分鐘。我這次用的龍蝦約1磅/450克,需要16分鐘。)
2.取出龍蝦放在一旁靜置10分鐘。將龍蝦殼剪開,取出龍蝦肉切成1.25cm/0.5"厚片。
3.鮑魚切成薄片。留在罐頭裡的醬汁可以用在其它菜肴上。
4.將龍蝦和鮑魚裝盤,以之字形方式擠上適量美奶滋。
