貢丸湯 Taiwanese Meatball Soup

材料 Ingredients
貢丸 Taiwanese meatball 8 個 ea
無鹽高湯 Unsalted stock 6 杯 cup
鹽 Salt 1 小匙 tps
白胡椒 White pepper 1/2 小匙 tps
蔥花 Minced scallion 2 大匙 Tbs
香菜丁 Chopped cilantro 2 大匙 Tbs

註:若使用含鹽高湯,則要降低鹽的用量。高湯可用水取代。
Note: Decrease the salt usage if using salted stock. You can substitute the stock with water.

做法
1.將高湯和鹽放進鍋裡燒滾。
2.每顆貢丸上劃兩刀,呈十字狀開口。此步驟可以省略。
3.等湯滾了以後加入貢丸,繼續煮到貢丸熱透。
4.把貢丸連湯舀進碗裡,再撒上蔥花,香菜和白胡椒。



PROCEDURE
1.Boil the stock and salt in a pot.
2.Score two crosses on each meatball. You can choose to skip this step.
3.When the soup is boiling, add the meatballs. Continue cooking until the meatballs are heated through.
4.Place the meatballs and soup in a bowl. Sprinkle the minced scallions, cilantro and white pepper on top.
