做法:
1. | 準備好甜年糕糊棗泥和蜜紅豆(1杯蜜紅豆可以用1/2杯棗泥替代)。核桃切碎 |
2. | 將甜年糕糊, 棗泥,蜜紅豆和核桃拌勻後倒進模具裡(我通常用1個8"圓形烤盤)。 模具要預先上油或鋪上玻璃紙(沒有玻璃紙可以用不沾粘烘培紙取代)。 |
3. | 蒸籠內水燒滾。將棗泥核桃年糕糊放進蒸籠裡用中大火蒸1小時20分鐘。試用竹籤插入年糕,拔出後竹籤上若未沾有年糕糊即是蒸好了。 |
4. | 等年糕完全冷透了再脫模。 |
5. | 將年糕用保潔膜包好放進冰箱冷藏。食用時可回鍋蒸熱,或用些許油軟煎,或裹粉油炸。 |
PROCEDURE:
1. | Prepare the Sweet Rice Cake Batter, Date puree and Glazed Red Beans (1 cup of Glazed Red Beans can be replaced by ½ cup of Date Puree). Chop the walnuts. |
2. | Mix the Sweet Rice Cake Batter, Date Puree, Glazed Red Beans and chopped walnuts in a bowl. Then pour the mixture into a mold (I usually use a 8" round baking pan.). Pre-oil the mold or place a piece of food grade cellophane paper (or non-stick parchment paper) inside of the mold. |
3. | Bring the water in the steamer to a boil. Steam the rice cake mixture in medium-high heat for 1 hour and 20 minutes. Insert a bamboo skewer in the steamed rice cake. If it comes out clean, then the rice cake is done. |
4. | Take out the rice cake when it cools completely. |
5. | Wrap the rice cake in a piece of plastic food wrap. To serve the rice cake, you can steam it, pan-fry it with little oil, or coat it with flour batter and deep-fry it. |
