叉燒餡 Char-Siu Filling

材料 Ingredients
蜜汁叉燒肉 Char-Siu BBQ pork 1 磅 lb (450g)
蔥(對切) Scallion (cut in half)1 支 ea
薑(拍碎) Ginger (curshed)1 小塊 small pc
蠔油 Oyster sauce1 大匙 Tbs
糖 Sugar1 大匙 Tbs
麻油 Sesame oil1/2 大匙 Tbs
白胡椒粉 Grounded white pepper1/8 小匙 tsp
水 Water 1/2 杯 cup
芡粉水 Corn starch water2+2 大匙 Tbs

做法
1.依照需要將叉燒肉切成適當的小丁。
2.將蔥,薑,蠔油,糖麻油,白胡椒粉和1/2杯水放進小鍋裡用煮滾後用最小火煮3分鐘。撈出蔥薑後加入叉燒肉。
3.2大匙芡粉用2大匙水調勻後倒入鍋裡煮到醬汁黏稠。熄火放涼以後使用。



PROCEDURE
1.Cut the Char-Siu BBQ pork into desired size.
2.Add the scallion, ginger, oyster sauce, sugar, sesame oil, white pepper and 1/2 cup of water into a pot. Bring the mixture to a boil then cook over lowest heat for 3 minutes. Remove the scallion and ginger then add the char-siu pork.
3.Mix 2 tbs. of corn starch with 2 tbs. of water. Add the corn starch water to the pot and stir consistently until the sauce is thick. Turn off the heat. Let the filling cool down completely before use.
