炸蝦托 Fried Shrimp Toast

做法
1. | 將冷凍的蝦仁和絞肉拿出放在室溫解凍。等到可以切得動而還是冷凍狀態時將蝦仁和絞肉切成1cm小丁。 |
2. | 將蝦和絞肉塊放進攪拌缸,裝上漿狀腳,用低速打5分鐘 (由1速漸進到3速),再轉成4速打到肉變泥狀有彈性,大約8分鐘。 |
3. | 將攪拌機轉成1速,加入絞肉醃料,打約1分鐘後再用4速拌勻即可。 |
4. | 吐司切去硬邊後,對切成兩個三角。 |
5. | 用橡皮刮刀抹適量的蝦仁餡吐司上,再放上一片香菜葉和撒上一些黑芝麻。 |
6. | 炸油燒到350˚F(175˚C)。放進吐司用中火炸到兩面金黃。撈出吐司放在紙巾上吸取多餘的油。 |
PROCEDURE:
1. | Defrost the frozen shrimps and ground pork in room temperature. Wait until you have no problem cutting through the shrimps and pork, but they are still mostly frozen. Cut the shrimps and ground pork into 1 cm cubes. |
2. | Place the shrimps and ground pork into the mixing bowl. Install the flat beater to the mixer and beat the shrimp mixture at low speed for 5 minutes (gradually from speed 1 to speed 3). Turn the speed to 4, and continue beating the mixture until it becomes elastic and puree like, approx. 8 minutes. |
3. | Turn the mixer to speed 1, add the Ground Pork Marinade and mix for 1 minute. Turn the speed to 4 and mix until all the ingredients are well blended. |
4. | Cut the crust off the bread. Cut each slice diagonally into two triangles. |
5. | Spread some of the shrimp puree on the bread. Top with one cilantro leave and some black sesame seeds. |
6. | Heat the oil to 350˚F(175˚C)。Fry the bread over medium heat until golden brown on both sides. Transfer the toasts onto paper towels to absorb the excessive oil. |
吐司蝦球 Fried Shrimp Balls with Diced Toast

做法
1. | 參考以上炸蝦托做法步驟1-3將蝦仁餡做好。 |
2. | 吐司切去硬邊後,切成1cm小丁。 |
3. | 拿起一團蝦泥,由虎口擠出小丸,再沾上麵包丁。 |
4. | 炸油燒到350˚F(175˚C)。放進蝦球用中火炸到金黃。撈出蝦球放在紙巾上吸取多餘的油。 |
PROCEDURE:
1. | Follow steps 1-3 on the instruction of "Fried Shrimp Toast" above to make the shrimp puree. |
2. | Cut the crust off the bread Cut the bread into 1cm cubes. |
3. | Place the shrimp puree on your palm. Close your palm loosely and form a circle opening with your index finger and thumb. Push the shrimp puree through the opening and form a small ball. Cover each shrimp ball with diced bread. |
4. | Heat the oil to 350˚F(175˚C)。Fry the shrimp balls over medium heat until golden brown. Transfer the shrimp balls onto paper towels to absorb the excessive oil. |
