做法
1. | 將百里香,迷迭香和胡椒粒放進磨粉機打碎後再與鹽,黑胡椒,大蒜粉,洋蔥粉,香草粉和辣根醬在一個碗裡拌勻。 |
2. | 牛排用紙巾擦乾,有肥油的那一面向上。先抹上3大匙橄欖油,再將步驟1的醃料均勻地抹在牛排上。讓牛排在室溫下休息30分鐘。 |
3. | 烤箱預熱到375°F (190°C)。 |
4. | 牛排放在烤架上並插上溫度計,然後放進烤箱烤45分鐘。之後熄火,烤箱門不要打開。讓牛排在烤箱裡待至少2個小時。2個小時後可移出牛排用錫箔紙蓋住,這樣烤箱可以用來烤其它東西。 | 5. | 烤箱溫度重新設到375°F (190°C)。繼續烤到牛排溫度達到135°F (62°C),大約再35分鐘。 |

PROCEDURE
1. | Grind the thyme, rosemary and peppercorns in a grinder then mix them with the salt, granulated garlic, granulated onion, ground coriander and horseradish in a bowl. |
2. | Pat the rib dry with paper towels. Rub the rib with olive oil first then with the mix spices. Let it rest in room temperature for 30 minutes. |
3. | Preheat the oven to 375°F (190°C)。 |
4. | Place the rib on a baking rack and insert a thermometer. Roast the rib in the oven for 45 minutes. Turn off the heat. Do not open the door and let the rib sit in the oven for at least 2 hours. You can remove the rib after 2 hours so you can use the oven to make other dishes. Cover the rib with a piece of foil. | 5. | Re-heat the oven to 375°F (190°C)。Continue to roast the beef until the inner temperature reaches 135°F (62°C), approx. another 35 minutes. |
6. | Transfer the rib to a chopping board. Cover with a piece of foil and wait for 15 minutes. |
