烤抱子甘藍和冬南瓜 Roasted Brussels Sprouts and Butternut Squash

材料 Ingredients
抱子甘藍 Brussels Sprout 1 磅 lb (450g)
冬南瓜 Butternut Squash 1 磅 lb (450g)
紅洋蔥 Red oOnion1 個 ea
石榴Pomegranate 1/2 個 ea
特級初炸橄欖油 Extra virgin olive oil 3 大匙 Tbs
鹽 Salt1 小匙 tsp
黑胡椒 Ground black pepper 1/2 小匙 tsp
濃縮義大利黑醋 Balsamic vinegar glaze 1/4 杯 cup



做法﹕
1.烤箱預熱到375˚F (190˚C)。
2.抱子甘藍洗乾淨後切掉頭部並剝去外層1-2葉,再對切成兩半。 冬南瓜和紅洋蔥去皮後切成与抱子甘藍一樣大小。打破石榴取出石榴籽。
3.把抱子甘藍,冬南瓜,紅洋蔥,橄欖油,鹽和黑胡椒在烤盆裡拌勻後鋪平。放進烤箱烤25分鐘,中途需拿出攪拌一下。
4.將烤好的蔬菜裝盤,淋上濃縮義大利黑醋再撒上石榴籽即可。



PROCEDURE:
1.Preheat the oven to 375˚F (190˚C)。
2.Rinse the Brussels sprouts and remove the tip of their stems. Take off couple outer leaves then cut each in half. Peel and cut the butternut squash and red onion into the same size as the Brussels sprouts.
3.Mix the Brussels sprouts, butternut squash, red onion, olive oil, salt and black pepper on a baking sheet and spread them into one layer. Bake the vegetables for 25 minutes. Stir them once in the half way.
4.Plate the roasted vegetables. Sprinkle with the balsamic vinegar and pomegranate.
