做法:
1. | 蛋黃和蛋白分開。將麵粉,鹽和泡打粉過篩到碗裡。牛油進微波爐微到融化,大約10秒。預熱鬆餅機。 |
2. | 在一個碗裡將蛋黃和糖先用高速打到開始變白後倒入牛奶,香草精和牛油繼續打1分鐘。最後加入粉類用中低速打到沒有麵粉粉粒,大約1分鐘。 |
3. | 把蛋白放進一個乾淨未沾到油脂或水的盆裡,用中低速打成泡沫狀,再增加到高速打成硬性發泡。 |
4. | 舀1/3蛋白霜進蛋麵糊用橡皮刀拌勻。再將麵糊倒進蛋白糊盆裡,從盆邊由下往上輕輕翻拌直到蛋白霜与巧克力麵糊充分混合。切忌過度攪拌。 |
5. | 依照鬆餅機指示倒入適量鬆餅糊覆蓋住鐵盤,蓋上蓋子烙熟。需立即食用,可依照個人喜愛撒上糖粉或淋上楓糖漿或各式果醬。 |
PROCEDURE:
1. | Separate the egg yolks and egg whites. Sift the flour, salt and baking powder into a bowl. Microwave the butter until melted, approx. 10 seconds. Preheat the waffle maker. |
2. | Beat the egg yolks and sugar in a bowl until the mixture starts to turn white. Add milk, vanilla extract and melted butter and beat for another minute. Finally add the flour mixture and beat in medium-low speed until the batter is smooth without lumps. |
3. | Place the egg whites in a clean bowl and whisk in medium-low speed until foamy. Gradually increase the speed to high and beat until stiff peaks form. |
4. | Add1/3 of the meringue to the batter and mix with a rubber spatula. Then pour the batter into the meringue. Gently fold the mixture in a down-cross-up-and-over motion until the meringue and batter are well blended. Do not over-mix. |
5. | Ladle proper amount of the batter to coat the waffle iron. Close the lid and cook as per manufacturer's instruction. Serve immediately. Top with powdered sugar or maple syrup or jam as desired. |
