芋頭椰汁西米露 Taro Coconut Milk with Sago (Tapioca)

材料 Ingredients
芋頭 Taro2/3磅 lb (300g)
椰奶 Coconut milk 1杯 cup
西米 Sago 1/3杯 cup
水 Water 4+2杯 cup
糖 Sugar 6 大匙 Tbs

做法:
1.將芋頭切成1cm小塊後放進電鍋或蒸籠裡蒸20分鐘,或蒸到你喜歡的軟度。
2.鍋裡燒開4杯水。放進西米用中小火煮15分鐘,要不時攪拌。
3.撈出煮好的西米在冷水下沖涼,然後浸泡在冷水中10分鐘。原鍋裡的水丟掉。
4.取1/2蒸好的芋頭与2杯水用食物處理機打勻,然後和椰奶及糖一起倒入鍋裡用中火煮到糖融化。
4.西米濾乾水份,舀一勺椰汁和西米拌勻後再一起倒回鍋裡拌勻。最後加入剩餘的芋頭繼續用中小火煮15分鐘,要不時攪拌。

PROCEDURE
1.Cut the taro into 1 cm cubes. Steam the taro in a rice cooker or steamer for 20 minutes, or until the taro reaches desired tenderness.
2.Boil 4 cups of water in a pot. Add the sago and cook over medium-low heat for 15 minutes, stir occasionally.
3.Drain the water and rinse the sago under running cold water. Soak the sago in cold water for 10 minutes.
4.Puree half of the steamed taro in a blender with 2 cups of water. Place the taro puree, coconut milk and sugar in the pot and cook over medium heat until the sugar is dissolved.
4.Drain the sago. Mix the sago with a ladle of the coconut mixture, then pour the mixture back to the pot. Stir until combined. Add the remaining taro and cook over medium-low heat for 15 minutes, stir occasionally.
