雞肉雜炊 Tori Zosui (Chicken Rice Soup)

材料 Ingredients
柴魚麵湯頭 Bonito Soup Base for Noodles 1 份 portion
雞肉(切小塊) Chicken (cut small cubes)2/3 磅 lb (300g)
香菇(切片) Shiitake mushroom (sliced)6 朵 ea
蔥 Scallion3 支 stalk
白飯 Cooked white rice2-1/2 杯 cup
蛋(打散) Egg (beaten)2 個 ea
醬油 Soy sauce2/3 大匙 Tbs

做法
1.準備柴魚麵湯頭。做高湯取出的海帶切成細絲備用。
2.蔥將蔥綠和蔥白分開。蔥白切斜段,蔥綠則切細丁。雞肉用2/3大匙醬油拌勻醃10分鐘。
3.柴魚麵湯頭煮滾後加入雞肉用中火煮到雞肉變白。
4.加入香菇和蔥白繼續煮3分鐘,撈起浮在湯上的泡沫渣滓。
5.白飯在冷水下沖洗並用手撥鬆。濾乾後和海帶絲一起加入湯裡煮到米粒變軟但尚未糊化。
6.最後淋進蛋液,略為攪拌。煮到蛋開始凝固即熄火。靜置3分鐘不要移動。
7.將雜炊裝碗,撒上蔥花即可。

PROCEDURE
1.Prepare the Bonito Soup Base for Noodles. Cut the kelp that was used for the stock into thin strips.
2.Separate the white part of scallion from the green part. Diagonally cut the white part into small segments. Mince the green part. Marinate the chicken with 2/3 tbs. of soy sauce for 10 minutes.
3.Bring the bonito soup base to a boil. Add the chicken and cook over medium heat until the chicken turns pale.
4.Add the shiitake mushroom and white part of the scallion and cook for 3 minutes. Skim off the foams at the surface of the soup.
5.Rinse the rice under running water and loosen the rice with your hand. Drain the rice. Add the rice and shredded kelp to the soup and cook until the rice is soft but not mushy.
6.Add the egg at the last. Stir briefly and cook until the eggs start curdling. Turn off the heat. Let the rice soup sit for 3 minutes.
7.Place the rice soup in a bowl and sprinkle with minced scallion.
