Prawns in Tomato Sauce

Ingredients
Prawns (headless with shell)1-1/4 lb (565g)
Onion1 medium
Minced garlic1 tsp
Minced ginger1 tsp
Corn starch2 Tbs
Cooking oil2+1 Tbs
Tomato Sauce1 portion
Minced scallion2 Tbs

Instructions
1.Rinse the prawns, leave the shell on. Cut the back of each prawn and devein. Dry the prawns with paper towels, then coat with corn starch. Peel and shred the onion.
2.Prepare the Tomato Sauce , increase the water in the recipe to 1/2 cup.
3.Place 2 tbs. of oil and prawns to a heated non-stick pan; pan-fry until golden brown on both side. (Traditionally the prawns are deep-fried at this step.). Set the prawns aside.
4.Add 1 tbs. of oil, onion, garlic and ginger to the same pan. Sauté until the onion starts turning soft.
5.Add the Tomato Sauce and cook over medium heat until the onion is soft. Put in the prawns and sauté until they are done and the sauce is thick. Be careful not to over-cook the prawns. At last mix in the minced scallion.

做法
1.蝦用水略微沖洗。每條蝦剪開蝦背,抽出泥腸。用紙巾擦乾後裹上2大匙芡粉。洋蔥去皮後切絲。
2.準備茄汁,將配方中的水改為1/2杯。
3.不沾平底鍋內燒熱2大匙油後加入蝦煎到兩面略微焦黃(此步驟傳統做法是用油將蝦炸酥)。將蝦盛出備用。
4.原鍋內燒熱1大匙油後加入洋蔥,蒜末和薑末爆炒至洋蔥稍微變軟。
5.加入茄汁用中火煮到洋蔥軟爛。放進蝦子翻炒到蝦全熟,醬汁變稠。要小心不要煮過頭以免蝦過老。最後拌入蔥花即可。
