Sautéed Vermicelli with Spicy Minced Pork

INGREDIENTS
Mung bean vermicelli3 bundle
Ground pork1/3 lb (150g)
Ma-Po Sauce w/o corn starch & cilantro1 portion
Water1/2 cup

INSTRUCTIONS
1.Prepare the Ma-Po Sauce, omit the cilantro and corn starch.
2.Rehydrate the vermicelli in warm water - do not soak too long to avoid becoming soggy. Roughly cut the vermicelli.
3.Place the Ma-Po Sauce part A in a heated pan; sauté until aromatic. Add the ground pork and stir until it is loose.
4.Add the Ma-Po Sauce part B, 1/2 cup of water and vermicelli. Cook over medium heat until the sauce is reduced to 20%, approx. 5 minutes. The sauce will be completely absorbed by the vermicelli when the dish is served.
5.Mix in the minced scallion. Reserve some for garnish.

麻婆醬汁(不要芡粉和香菜)1 份 portion

做法
1.準備麻婆醬汁,省略配方中的香菜和芡粉。
2.將粉絲用溫水泡軟,不要泡太久以免過軟。泡完後用剪刀略剪。
3.鍋燒熱後放入麻婆醬汁的A料﹐將薑蒜和辣豆瓣醬爆香後加入絞肉炒散。
4.加入麻婆醬汁的B料,1/2杯水和粉絲,用中火煮到水份收到8成乾,大約5分鐘。因為粉絲會吸水﹐等擺盤上桌後醬汁就會被吸乾。
5.最後拌入麻婆醬汁的C料的蔥花,保留一些撒在上面裝飾。
