Sautéed Vermicelli with Spicy Minced Pork

INSTRUCTIONS
1. | Prepare the Ma-Po Sauce, omit the cilantro and corn starch. |
2. | Rehydrate the vermicelli in warm water - do not soak too long to avoid becoming soggy. Roughly cut the vermicelli. |
3. | Place the Ma-Po Sauce part A in a heated pan; sauté until aromatic. Add the ground pork and stir until it is loose. |
4. | Add the Ma-Po Sauce part B, 1/2 cup of water and vermicelli. Cook over medium heat until the sauce is reduced to 20%, approx. 5 minutes. The sauce will be completely absorbed by the vermicelli when the dish is served. |
5. | Mix in the minced scallion. Reserve some for garnish. |

1. | 準備麻婆醬汁,省略配方中的香菜和芡粉。 |
2. | 將粉絲用溫水泡軟,不要泡太久以免過軟。泡完後用剪刀略剪。 |
3. | 鍋燒熱後放入麻婆醬汁的A料﹐將薑蒜和辣豆瓣醬爆香後加入絞肉炒散。 |
4. | 加入麻婆醬汁的B料,1/2杯水和粉絲,用中火煮到水份收到8成乾,大約5分鐘。因為粉絲會吸水﹐等擺盤上桌後醬汁就會被吸乾。 |
5. | 最後拌入麻婆醬汁的C料的蔥花,保留一些撒在上面裝飾。 |
