高麗菜飯 Cabbage Rice

材料 Ingredients
炒麵醬汁 Fried noodle sauce 1 份 portion
白米 Jasmine Rice 1-1/2 杯 Cup
水 Water1-1/4 杯 Cup
高麗菜(切2.5cm方塊) Taiwanese Cabbage (Cut 1" square)2/3 磅 lb (300g)
梅頭肉((切2.5cm薄片) Pork Butt (Cut 1" slice)1/2 磅 lb (225g)
基本醃料(濃) Basic marinade (dark) 1 份 Portion
蝦米(泡軟) Dried shrimp (soaked)2 大匙 Tbs
香菇(切片) Shitake Mushroom (sliced)8 朵(中) medium
紅蔥頭(切丁) Shallot (diced)4 個(小) small
油 Cooking oil 3 大匙 Tbs

註:1.5杯米 = 2杯電鍋量杯的米。
Note: 1.5 cups of rice = 2 rice cooker measurement cups of rice.

做法
1.準備炒麵醬汁
2.1.5杯米沖洗乾淨後濾乾。將米,1.25杯水和炒麵醬汁B料放進電鍋的內鍋浸泡。
3.準備剩餘的食材。豬肉絲與 基本醃料(濃)拌勻後醃15分鐘。
4.鍋燒熱後加入3大匙油和紅蔥頭炒香﹐續加蝦米炒1分鐘。再加肉絲炒散,肉色變白。
5.加入高麗菜,香菇和炒麵醬汁A部份飯炒至高麗菜開始變軟。盛出炒好的餡料,轉放入電鍋內鍋 - 鋪在米上,不要與米攪拌。
6.依照平常煮白飯的方式煮﹐煮完後燜10分鐘。掀開鍋蓋,倒入蔥花拌勻即可。

PROCEDURE
1.Prepare the Fried Noodle Sauce.
2.Rinse 1.5 cups of rice and drain the water. Place the rice, 1.25 cups of water and Part B from the Fried Noodle Sauce in the pot for rice cooker.
3.Prepare the rest of ingredients. Marinate the pork with Basic Marinade (Dark) for 15 minutes.
4.Add 3 tbs. of oil and shallot in a heated pan; sauté until aromatic. Add the dried shrimps and sauté for another minute. Place in the pork and stir until the pork strips are loose and the color turns white.
5.Add cabbage, shiitake mushroom and Part A from Fried Noodle Sauce. Sauté until the cabbage starts turning soft. Transfer the mixture to the pot - on top of the rice, do not mix.
6.Cook the rice by following the instructions of the rice cooker. Once the rice is done, let it sit with lid on for 10 minutes. Open the rice cooker; add the minced scallion and mix.
