Fish in Miso Sauce

Ingredients
Tilapia (whole fish/degutted)1-1/3 lb (600g)
Ginger2 large slice
Cooking oil1/4 cup
Miso sauce 1 portion
Water1 cup

Note: You can use any white meat fish.

Instructions
1.Prepare the Miso Sauce.
2.Wash the fish and pat dry with paper towels to avoid oil spill while pan-frying
3.Cut 3 diagonal lines on each side of the fish, deep to the bone.
4.Place 1/4 cup of oil and ginger slices in a heated non-stick pan; pan-fry until aromatic. Add the fish and pan-fry over high heat for 3 minutes. Turn the fish over and pay-fry for another 3 minutes.
5.Add part A from the Miso Sauce and 1 cup of water. Cook over medium heat until the sauce is reduced to 1/3, approx. 6 minutes. Turn the fish once in the midway.
6.Stir in the sesame oil from Part B of the Miso Sauce. Plate and fish; pour the sauce over the fish and sprinkle with the diced scallion.

吳郭魚 (全魚/清理過)1-1/3 磅 (600克)

註﹕此道菜可以用任何白色肉魚。

做法
1.準備味增醬汁
2.魚洗乾淨後用紙巾擦乾,以免煎的時候油爆。
3.在魚身斜劃三刀入骨,兩面都要,這樣魚比較入味,內部也比較容易煎熟。
4.不沾鍋燒熱後加入1/4杯油和薑片煎香。放魚入鍋以大火煎3分鐘,翻面後再煎3分鐘至表皮酥脆。
5.倒入味增醬汁A料和1杯水中火煮約6分鐘,一直到魚入味而將醬汁也剩到 1/3 - 中途要翻面一次。
6.醬汁中拌入麻油。盛出魚裝盤後淋上醬汁再撒上蔥花即可
