Instructions
1. | Refer to Handling Clams to clean the clams. |
2. | Prepare the Dark Vinegar Sauce |
3. | Place the part A from the Dark Vinegar Sauce to a heated wok and sauté until aromatic. Add part B from the Dark Vinegar Sauce and bring the sauce to a boil. |
4. | Add the clams; cover and cook over medium-high heat for 2 minutes. |
5. | Remove the lid and continue cooking. Transfer the clams immediately to a deep plate once they are open. Sprinkle the clams with the scallion from part C of the Dark Vinegar Sauce then pour the remaining sauce over. Serve immediately. |

1. | 參考蛤蜊處理將蛤蜊清理乾淨。 |
2. | 準備香醋醬汁。 |
3. | 炒鍋燒熱後放進香醋醬汁A料爆香。加入香醋醬汁A料爆香煮滾。 |
4. | 倒入蛤蜊翻炒數下後加蓋用中火煮2分鐘。 |
5. | 除去蓋子。繼續煮,當蛤蜊殼一打開後馬上夾出放進盤內。等所有蛤蜊都夾出後,撒上香醋醬汁C料的蔥花,再將剩餘醬汁淋在蛤蜊即可。 |
