麻辣涼拌牛肚 Tripe in Hot Spicy Dressing

A 材料 Ingredients A
牛肚 Beef tripe 1 個 each
水 Water 5 杯 cup
酒 Cooking wine4 大匙 Tbs
蔥 Scallion1 支 stalk
薑 Ginger1 小塊 chunk
花椒粒 Chinese chili peppercorn1 大匙 Tbs
黑胡椒粒 Black peppercorn1 大匙 Tbs
八角Star anise2 顆 each
B 材料 Ingredients B
蔥 Scallion2 支 stalk
薑 Ginger1 小塊 chunk
蒜 Garlic5 瓣 clove
紅辣椒 Chili pepper1 支 each
香菜 Cilantro 1 小把 small bunch
麻辣涼拌醬汁 Hot spicy dressing 1 份 Portion

做法
1.將B料中蔥﹐薑﹐香菜洗乾淨。辣椒去籽。將上述材料都切成 5cm 細絲。蒜拍碎。
2.將麻辣涼拌醬準備好。
3.將A料放進電鍋,外鍋放一杯水蒸煮。 等電鍋跳起來後燜30分鐘。 如果牛肚還不夠爛,外鍋加半杯水再煮。(也可以直接在爐子上煮。) 等牛肚涼了以後切成細絲。
4.將牛肚絲与B料拌勻。放進冰箱保存至少1個小時使其入味。



PROCEDURE
Put the ingredients in Part A in a pot. Place the pot and one cup of water in a rice cooker. When it is done, wait for 30 minutes before opening the lid. If the tripe is not tender enough, add ½ cup of water to the rice cooker and continue cooking. You can cook everything on a stove. Cut the tripe into thin strips after it has cooled down.
1.For the ingredients in Part B, wash the scallion, ginger and cilantro. Wash and seed the chili pepper. Cut them all into 2" julieenes. Crush the garlic cloves.
2.Prepare the Hot Spicy Sauce.
3.
Mix the tripe with the ingredients in Part B. Store the mixture in a refrigerator for at least one hour. Serve cold.
