Sautéed Dried Anchovies with Dried Bean Curds

Ingredients
Dried bean curd (sliced vertically) 3/4 lb (338g)
Dried anchovy1/4 lb (113g)
Cooking oil1/4 cup
Black bean sauce1 portion

Instructions
1.Rinse the dried anchovies then pat dry with paper towels.
2.Prepare the Black Bean Sauce.
3.Heat 4 tbs. oil in a pan. Add the dried anchovies and pan-fry over medium heat until crispy. Set the anchovies aside.
4.Wipe the pan clean. Place the part A from the Black Bean Sauce in the same pan and sauté until aromatic. Add and boil the part B from the Black Bean Sauce.
5.Stir in the dried bean curds and sauté until every slice of the bean curd is colored from the sauce. Turn off the heat; add the fried anchovies and mix well.

做法
1.小魚乾用水沖洗後用紙巾擦乾。
2.準備豆豉醬汁
3.4大匙油燒熱,放進小魚乾用中火炒酥。盛出小魚乾放在一旁。
4.鍋子擦乾淨。原锅倒入豆豉醬汁A料爆香,加入豆豉醬汁B料煮滾。
5.放進豆乾炒到每片豆乾都著色。熄火再加入小魚乾拌勻即可。
