Scallion & Ginger Fish

Instructions
1. | Rinse the fish steak then pat dry with paper towels. |
2. | Prepare the Brown Sauce. |
3. | Place 2 tbs. of oil, ginger and scallion (white part) in a heated non-stick pan. Pan-fry over low heat until aromatic. Set the scallion and ginger aside. |
4. | Add 2 tbs. of oil and fish steak in the same pan; pay-fry over medium-high heat until golden brown on both sides. |
5. | Add the brown sauce and cooked ginger and scallion. Cook over high heat until the sauce is reduced to 1/3 - spoon the sauce over the fish occasionally. |
6. | Put in the scallion (green part) and cook for another 30 seconds. |
7. | Transfer the fish to a plate. Place the ginger and scallion on top of the fish then pour the sauce over. |

1. | 魚排沖洗乾淨後用紙巾擦乾。 |
2. | 準備紅燒醬汁。 |
3. | 不沾平底鍋燒後放2大匙油,薑絲和蔥白用小火煎香。夾出蔥薑備用。 |
4. | 原鍋加入2大匙油和魚排,用中大火將魚排兩面煎黃。 |
5. | 倒入紅燒醬汁和煎過的蔥薑用大火煮到醬汁也剩到1/3,當中偶爾用湯匙將醬汁淋在魚上。 |
6. | 加入蔥綠繼續煮30秒。 |
7. | 將魚裝盤,蔥薑蔥夾放在魚上再淋上醬汁即可。 |
