Scallion & Ginger Fish

Ingredients
King mackerel steak1 lb (450g)
Brown sauce1 portion
Scallion (cut 2.5cm/1" segments, separate green part from the white part)4 stalk
Ginger (cut 2.5cm/1" thin strips)6 large slice
Cooking oil2+2 Tbs

Instructions
1.Rinse the fish steak then pat dry with paper towels.
2.Prepare the Brown Sauce.
3.Place 2 tbs. of oil, ginger and scallion (white part) in a heated non-stick pan. Pan-fry over low heat until aromatic. Set the scallion and ginger aside.
4.Add 2 tbs. of oil and fish steak in the same pan; pay-fry over medium-high heat until golden brown on both sides.
5.Add the brown sauce and cooked ginger and scallion. Cook over high heat until the sauce is reduced to 1/3 - spoon the sauce over the fish occasionally.
6.Put in the scallion (green part) and cook for another 30 seconds.
7.Transfer the fish to a plate. Place the ginger and scallion on top of the fish then pour the sauce over.

馬鮫魚排1 磅 (450克)
紅燒醬汁1
青蔥 (切2.5cm/1"小段 蔥白蔥綠分開)4
薑 (切2.5cm/1"細絲)6 大片
食用油2+2 大匙

做法
1.魚排沖洗乾淨後用紙巾擦乾。
2.準備紅燒醬汁
3.不沾平底鍋燒後放2大匙油,薑絲和蔥白用小火煎香。夾出蔥薑備用。
4.原鍋加入2大匙油和魚排,用中大火將魚排兩面煎黃。
5.倒入紅燒醬汁和煎過的蔥薑用大火煮到醬汁也剩到1/3,當中偶爾用湯匙將醬汁淋在魚上。
6.加入蔥綠繼續煮30秒。
7.將魚裝盤,蔥薑蔥夾放在魚上再淋上醬汁即可。
