Noodles in Sha-Cha Sauce

1. | Boil a 2/3-full pot of water. Poach the egg in the water (please refer to Making Poached Eggs). Set the egg aside. Cook the noodles by following the package instructions. |
2. | While cooking the noodles, place the sha-cha sauce, soy sauce, sugar and mushroom concentrate in a bowl; add 1 ladle of the cooking noodle water and mix everything in the bowl well. |
3. | Transfer the cooked noodles into the bowl in the sauce. Blanch the Taiwanese cabbage in the boiling water for 30 seconds. Take them out of the pot and place them on top of the noodles. |
4. | Top the noodles with the poached egg and minced scallion. Mix the noodles with sauce while serving. |

1. | 燒開2/3鍋的水。先放入蛋煮成蛋包(請參考水波蛋做法)。將蛋撈出放在一旁。然後依照麵條包裝指示將麵煮熟。 |
2. | 煮麵的同時,在麵碗裡放進沙茶,醬油,糖和香菇精。另舀1杓煮麵水一起拌勻。 |
3. | 麵煮熟後撈出放進碗裡醬汁上。將小白菜放進鍋裡燙熟,約30秒。撈出小白菜放在麵上。 |
4. | 最後擺上蛋包再撒上蔥花。食用時將麻醬醬汁与麵拌勻。 |
