Dry-Fried Green Beans

Ingredients
Green bean (snip off the ends/cut into 7.5cm/3" segments)1 lb (450g)
Dried shrimp (soaked)1 Tbs
Chinese pickled mustard (diced)2 Tbs
Scallion (diced)1 stalk
Cooking oil2+1 Tbs
Water1/3 cup
Salt1/2 tsp
Sugar1 Tbs
Sesame oil1 tsp
Rice vinegar1 Tbs

Instructions.
1.Set the air fryer to 400°F(205°C). Mix the green beans with 2 tbs. of oil and cook in the air fryer for 20 minutes - stir the green beans in the midway. If you don't have an air fryer, fry the green beans in 350°(175°) oil until the beans are lightly wrinkled.
2.Place 1 tbs. of oil in a heated pan; add dried shrimp and Chinese pickled mustard; sauté until aromatic.
3.Add the green beans, salt, sugar and water. Stir over medium-high heat until the liquid evaporates.
4.Turn off the heat and mix in the scallion, sesame oil and rice vinegar. Serve this dish hot or cold.

做法
1.氣炸鍋設定在400°F(205°C)。四季豆与2大匙油拌勻後放進氣炸鍋炸20分鐘,中途取出攪拌一下。如果用平常鍋油炸,用350°F(175°c)油炸至外皮微皺。
2.炒鍋燒熱後加入1大匙油,放進蝦米和榨菜爆香。
3.加入四季豆,鹽,糖和水,用中大火翻炒到汁收乾。
4.熄火。加入蔥花,麻油和米醋,再拌炒數下即可裝盤。此菜可熱食或冷食。
