醬爆茄子 Sautéed Eggplants with Sweeten Soybean Sauce

材料 Ingredients
中國茄子 Chinese eggplants 2 條 ea
青蔥 Scallion 1 支 stalk
炸油 Oil for deep-frying適量 Proper amount
醬爆醬汁 Sweeten Soybean Sauce 1 份 portion

做法
1.茄子洗乾淨後切掉頭部,再直切成兩半,共4片。用刀尖在每片茄子皮上劃上格子刀紋後切成5cm小段。蔥洗乾淨後切成蔥花。
2.將醬爆醬汁準備好。
3.燒開1/2小鍋的水。
4.炸油燒熱後,放進茄子用大火炸2分鐘。
5.撈出茄子放進滾水裡煮1分鐘後盛出濾乾。
6.將茄子和醬爆醬汁放進燒熱的炒鍋內拌炒至醬汁收乾。最後撒上蔥花。



PROCEDURE
1.Wash the eggplants and cut off the top part. Cut each eggplant lengthwise in half. Use the tip of a knife to score a crisscross pattern on the skin and cut each half of eggplant into 2" segments. Wash and mince the scallion.
2.Prepare the Sweeten Soybean Sauce.
3.Boil a ½ full pot of water.
4.Heat the oil for deep-frying. Fry the eggplants in high heat for 2 minutes.
5.Transfer the eggplants to the boiling water and cook for 1 minutes. Drain the eggplants and set them aside.
6.Place the eggplants and the Sweeten Soybean Sauce in a heated wok and sauté until the sauce is reduced. Sprinkle with the minced scallions.
