做法
1. | 茄子洗乾淨後切掉頭部,再直切成兩半,共4片。用刀尖在每片茄子皮上劃上格子刀紋後切成5cm小段。蔥洗乾淨後切成蔥花。 |
2. | 將醬爆醬汁準備好。 |
3. | 燒開1/2小鍋的水。 |
4. | 炸油燒熱後,放進茄子用大火炸2分鐘。 |
5. | 撈出茄子放進滾水裡煮1分鐘後盛出濾乾。 |
6. | 將茄子和醬爆醬汁放進燒熱的炒鍋內拌炒至醬汁收乾。最後撒上蔥花。 |
PROCEDURE
1. | Wash the eggplants and cut off the top part. Cut each eggplant lengthwise in half. Use the tip of a knife to score a crisscross pattern on the skin and cut each half of eggplant into 2" segments. Wash and mince the scallion. |
2. | Prepare the Sweeten Soybean Sauce. |
3. | Boil a ½ full pot of water. |
4. | Heat the oil for deep-frying. Fry the eggplants in high heat for 2 minutes. |
5. | Transfer the eggplants to the boiling water and cook for 1 minutes. Drain the eggplants and set them aside. |
6. | Place the eggplants and the Sweeten Soybean Sauce in a heated wok and sauté until the sauce is reduced. Sprinkle with the minced scallions. |
